Bhatura
||Ingredients||
Maida replacer - 2 + 1/2 cup
Gluten free rice flour - 2 tsp
Sugar - 1 tsp
Salt - 1/ 2 tsp
Oil - 1 tbsp
Gluten free Baking powder - 3/4 tsp
Curd - 1/4 cup
Lukewarm water - as required
Oil - for frying
||Method||
Take a large bowl add maida replacer, rice flour, salt and
sugar. Mix it well.
Make a hole in the centre, add curd and baking powder, then
mix it.
Now with lukewarm water knead the dough.
Make a smooth and a little soft dough.
Apply little oil and let it rest for 2 to 3 hours (in
summers) or 6-7 hours (in winters).
After that slightly knead the dough again and pinch a small
ball sized dough and flatten it.
Now roll the bhatura, neither too thin nor too thick.
Fry it in very hot oil and press with the ladle to puff up.
Flip over and fry the bhaturas till they are golden brown
from both sides.
Drain the bhatura onto tissue paper to remove excess oil.
Serve bhaturas with chole masala.
