Good day biscuit
||Ingredients||
Gluten Free Flour - 1 cup
Maida replacer - 1/3 cup
Baking soda - 1/4 tsp
Milk powder - 2 + 1/2 tsp
(optional)
Gluten free Baking powder - 3/4
tsp
Cashew powder - 2 + 1/2 tbsp
Butter - 1/2 cup
Sugar - 3/4 cup
Flax Seeds - 1 tbsp
Hot water - 3-4 tbsp
Vanilla essence - 1 tsp
||Method||
Whisk the butter in a bowl, for
5-8 minutes, then add sugar and whisk again to make it light and fluffy. Then
add vanilla essence and mix again.
On the other hand mix the flax
seeds and hot water, and let it rest for a while till it feels like a gel.
After that, mix the flax seeds
mixture to the sugar, vanilla essence and butter mixture.
Now in another bowl mix the
gluten free flour, maida replacer, baking soda, baking powder, cashew powder
and milk powder. Then add this mixture little by little to the wet ingredients
and mix with your fingers. The dough should be soft. Don't over-knead it. If
required add 1-2 tbsp milk to it.
Wrap this in cling film and
refrigerate for half an hour. Then, divide it into 2 portions.
Roll this and cut it in a circle
shape with a bottle cap or cookie cutter. Then with a toothpick make the good
day design on the biscuit by pressing it a little bit.
Now bake it for 10-12 minutes on 180℃.
Keep an eye on them because they
bake fast.
||Notes||
Any gluten free flour would work
with this recipe.
While rolling it you can use
butter or parchment paper too.
