Homemade Bourbon Biscuits

Bourbon biscuits are chocolate cream sandiwiches loved by everyone!  

||Ingredients||

For Biscuits

Butter - 1/2 cup

Powdered sugar - 3/4 cup

Maida replacer - 1 + 1/2 cup + 2 tbsp

Gluten free Baking powder - 1+ 1/2 tsp

Baking soda - 1/4 tsp

Flaxseed powder - 1+ 1/2 tsp

Warm water - 3 - 4 tsp

Cocoa powder - 4 tbsp

Vanilla essence - 1 tsp

Milk - 3 tbsp

Sugar - for garnishing

For making chocolate cream:

Butter - 1/4 cup

Powdered sugar - 1 cup

Milk - 1 tsp or more (as required)

Cocoa powder - 3 tbsp

||Method||

For Biscuits:

Take a small bowl add powdered flaxseeds and water. Mix well and keep this aside.

In a large bowl add butter and whisk it until it is soft. You can use both electric or hand whisker.

When the butter softens add the sugar and whisk it until it's light and fluffy.

Sieve the maida replacer, baking powder, baking soda, salt and cocoa powder.

Add the sieved ingredients, the flaxseed mix and vanilla essence to the butter and sugar mixture. Mix this with your fingers.

Gradually, add the milk (1 tbsp at a time) in this mixture. The dough should be pliable.

Take 2 butter papers or plastic sheets. Take out half portion of the dough and put it in between the sheets. Roll it and cut out the shapes of the bourbon biscuits.

Prick it with a toothpick and sprinkle some sugar granules.

Grease the baking tray with butter and preheat the oven at 180℃. Bake the biscuits for 15 minutes.

For chocolate cream:

Add the butter and whisk it with an electric mixer.

When it softens add the powdered sugar and whisk it till it gets light and fluffy.

Add the milk and cocoa powder. Whisk it again until it is well combined.

Keep it in the fridge for about 15 to 20 minutes.

Assembling:

When the biscuits cool down and the cream is set, then start assembling.

Take a biscuit apply about 1/2 tsp of cream and put the other biscuit on it.

Bourbon biscuits are ready. Allow them to rest for some time and then serve.

||Notes||

When you combine the dough do it with your fingers, lightly.

Add the milk gradually.

Baking time varies from oven to oven.

You can cut the biscuits in desired shapes.
