Homemade Nimki
Nimki is a very tasty and flavorful teatime snack!
||Ingredients||
For Dough
Maida replacer - 2 cups
Gluten free Chickpea flour (Besan) - 2 tbsp
Gluten free baking powder - 3/4 tsp
Cumin seeds - 1/2 tsp
Salt - as per taste
Black pepper powder - 1/2 tsp
Carom seeds - 1/2 tsp
Clarified butter (ghee) - 4 tbsp
Lukewarm water - for kneading the dough
Oil - for frying
For pasting
Maida replacer - 2 tbsp
Ghee - 2 tbsp (not melted only soft)
||Method||
Take a bowl add maida replacer, besan, carom seeds, cumin seeds, black pepper powder, baking powder and ghee to it.
Mix it very well, the texture should be like bread crumbs or when you hold it should hold the shape.
Now gradually add water and bind the dough.
Keep it aside and let it rest for 20 to 25 minutes.
Now make a paste of ghee and maida replacer by mixing them together and keep aside.
Then take the dough, smoothen it a little and divide it into 3 - 4 equal parts.
Roll them very thin, apply the paste on it and make a tight roll of it (like a log).
Cut the roll into small parts and make small balls out of them.
Take one of the balls, roll it and apply the paste on it. Fold it into a triangle and again apply paste on it. Then gold it again and roll it.
Prick it with a fork from both sides.
Make all the nimkis in the same way.
Now in a kadhai add oil and heat it on medium flame.
Fry the the nimkis on low to medium flame by pressing them from both sides until they are golden brown.

Folding method is done for creating the layers.
Spices can be varied.
Frying should be done on low to medium flame or else they
wouldn’t cook from the inside.
