Sweet Seviyan

 


||Ingredients||

 

Clarified butter (ghee) - 4 tbsp

 

Gluten free Vermicelli - 1 cup

 

Water - 1+1/2cup

 

Sugar - 1/2 cup

 

Cashew - 2tbsp (chopped)

 

Almond - 2 tbsp (chopped)

 

Saffron - 10 to 12 threads (dissolving 3 to 4 tbsp water)

 

Green cardamom powder - 1/4 tsp

 

||Method||

 

Heat a pan and add 2 tbsp ghee, then add vermicelli and roast it on low flame.

 

Roast until seviyan turns golden brown. On the other side take 4 tbsp water and put saffron in it.

 

Now switch off the flame, let the seviyan cool down a little bit and then add 1 and a half cup water in it. Switch on the flame and stir continuously on low to medium flame. Also add saffron water and sugar to it.

 

Mix well so that the sugar dissolves completely. Continue to cook it till the seviyan absorb all the water and leaves the pan.

 

At this stage, also add the remaining ghee, cardamom powder and chopped dry fruits .(You can also add the roasted dry fruits which can be done by first roasting the dry fruits in a little ghee and then add them)

Serve the seviyan garnished with more saffron and dry fruits.
