Veg Lolliops

 




||Ingredients||

 

For dough

 

Bolied Kidney Beans (Rajma) - 1 cup

 

Boiled Potato - 2

 

Capsicum (finely chopped) - 1

 

Onion (finely chopped) - 1

 

Grated carrot -1

 

Mint leaves (finely chopped) - 1/2 cup

 

Garlic (grated) -1 or 2 (optional)

 

Salt - 3/4 tsp or as to taste

 

Coriander powder - 1/2 tsp

 

Red chilli powder - 1/2 tsp

 

Cumin seeds - 1/2 tsp

 

For binding

 

Rice Flour - 2 to 3 tbsp

 

Gluten Free corn flakes (powdered) - 1/4 cup

 

For slurry

Maida replacer - 3 tbsp

 

Water - 1/2 cup

 

||Method||

 

Take a big bowl and add the kidney beans to it. Mash them very well.

 

Now in the same bowl, grate the boiled potatoes.

 

Now add all the vegetables along with the chopped mint and spices.

 

Mix well with the help of your hands.

 

Now add rice flour and corn flakes. Mix it very well.

 

If needed add 1 to 2 tbsp extra rice flour or corn flakes.

 

Now make small balls out of this mixture.

 

Dip these balls into the slurry and roll them onto the powdered cornflakes.

(Mix the ingredients for slurry, without any lumps to make slurry)

 

Heat a pan or kadhai. Add oil to it. And, fry these balls on a low to medium flame.

 

Once the balls are golden brown, take them out and put toothpicks into them.

 

Serve hot.
