Zingy Parcel



||Ingredients||

 

For dough

 

Yeast - 1 + 1/2 tsp

 

Sugar - 1 + 1/2 tsp

 

Water (hot) – 3/4 cup + 1/2 cup

 

Salt - 3/4 tsp

 

Oil - 2 tbsp

 

Maida replacer - 2 cups + 2 tbsp

 

 

For sauce

 

Boil potato - 1

 

Cream or malai - 2 tbsp

 

Curd - 2 tbsp

 

Salt - 1/2 tsp

 

Sugar - 1/4 tsp

 

Mustard oil or mustard powder - 1/2 tsp

 

Red chilly (whole)  - 1

 

Garlic - 2 pods

 

Water – 5-6 tbsp

 

Black pepper powder - 1/4 tsp

 

Coriander powder - 1/2 tsp

 

Herbs - 1/2 tsp (according to choice)

 

For filling

 

Paneer - 150 grams (cut into square pieces)

 

Garlic - 1 or 2 grated

 

Turmeric powder - 1/4 tsp

 

Salt - 1/2 tsp

 

Red chilly powder - 1/4 tsp

 

Garam masala - 1/4 tsp

 

Prepared Sauce - 1 tsp

 

Butter - 2 tsp

 

For brushing

Butter - 3 to 4 tbsp (melted)

 

Herbs – as per choice

 

Chilly flakes – as per choice

 

||Method||

 

For Dough

 

Add sugar to lukewarm water and mix it. Add the yeast to it.

 

Mix well. Cover it and let it rest for 10-15 minutes.

 

Then add the maida replacer, salt and oil in a bowl. Mix with your hands.

 

Now add the activated yeast in this and mix well.

 

Knead the dough with a little warm water, if required. The dough should be a little loose.

 

After kneading, grease the dough with a little oil to smoothen it.

 

Let it rest for 2-3 hours.

 

For sauce

 

In 1 cup water, boil the red chilli and garlic for 5-6 minutes. Let it cool.

 

Then take out the chilli and garlic and let it cool.

 

Now in a mixer add the boiled potato, boiled chilli, boiled garlic and the rest of the ingredients. Grind these to a smooth consistency.

 

For Filling

 

In a pan add grated garlic and cook it on low flame for 1-2 minutes.

 

Then add 2 tbsp butter in it. Also add the rest of the spices and paneer cubes.

 

Cook it for 3-4 minutes on low to medium flame.

 

Now add 1 tsp of the prepared sauce.

 

Cook it for another 1-2 minutes.

 

||Assembling||

 

Punch the dough and using some oil and dry flour smoothen it again.

 

Now divide it into equal portions.

 

Take one portion, roll it with the help of dry flour.

 

Now fold it in a triangle shape i.e. bring the three corners towards the centre. Leave a little space in the centre.

 

Apply a little bit of water on your hands and tap it all over the corners.

 

Now spread 1-2 tbsp sauce at the centre and put 5-6 pieces of paneer on it.

 

Bring all the corners together and seal it properly. You can also use toothpick to make it stable.

 

Prepare all the parcels in the same way.

 

Now, bake these in an oven preheated at 200°C for 20-25 minutes.

 

||Notes||

 

The proper activation of yeast is very for the recipe to turn out well.

 

The masalas in the sauce can be varied.

 

The baking time differs from oven to oven, mine took 23 minutes.
