||Ingredients||
For balls
Milk - 1/2 litre (full cream)
Rice - 1/4 cup
Sugar - 1 tbsp
Maida replacer - 1+ 1/2 tbsp
Gluten free corn flour - 1 tsp
Rice flour - 1/2 tsp
Oil for frying
For sugar syrup
Sugar - 1 cup + 2 tbsp
Water - 3/4 cup + 2 tbsp
Cardamom powder - 1/4 tsp
Saffron - few strands
||Method||
For sugar syrup
Put sugar, water, cardamom powder and saffron in a pan.
When the sugar melts, simmer the flame.
The sugar syrup should be sticky.
For balls
Wash and the soak the rice in water for about 15-20 minutes.
Now boil the milk in a pan and add the soaked rice in it
once it boils. Also add the sugar and mix well.
Cook on low to medium flame until it becomes thick.
After that switch off the flame and mash it with a spatula
and spread it in the pan for cooling it down.
Then grind this mixture into a fine paste.
Now take it out in a plate, add maida replacer, rice flour
and cornflour in it.
Mix well and shape them like gulab jamuns (by applying some
ghee or oil in your hand). Fry them on medium flame.
Put the fried balls in the sugar syrup for 2- 3 hours.
After that they are ready to serve.
||Notes||
If the mixture is a little sticky then apply some ghee or
oil in your hand to shape it properly.
Don’t add too much dry flour to it.
