Rice Flour Halwa

 

This recipe's credit goes to my mother, who has given me hope and positive vibes no matter the situation. She always tells me that difficulties come in our lives but we should never stop trying. In 2012 my daughter was diagnosed with celiac. There were already innumerable problems I had to deal with, but the one thought that was constantly in my mind was that the navratre were coming closer and I had to make halwa on the ninth day, which is primarily made of suji (contains gluten). I was discussing the issue with my mother, fighting to hold back tears, as my daughter couldn’t have the Ninth Day Prashad of Navratre. My mother too became upset but assured me that she would do something about it. At night, she soaked rice at her place and brought that to me the next day. After drying it up she got to work. She worked tirelessly to make the halwa using alternative ingredients. The halwa she made turned out even more awesome than the one I used to make before, using suji. I was happy, that my daughter would not have to miss out on any of the festive food. That is why I thought that I should share this recipe with everyone.

||Ingredients||

 

Rice flour - 1 cup

 

Clarified butter (Ghee) - 1/2 cup (amount can vary)

 

Sugar - 1 cup

 

Water - 1.5 cups

 

Cardamom powder - 1/2 tsp

 

Almonds (chopped) - 6-7

 

Cashews (chopped) - 6-7

 

||Method||

 

Take a pan and heat the ghee in it.

 

Add the rice flour and roast it well. After 5-7 minutes its colour will change to brown and it will be aromatic which indicates that it is roasted.

 

Now add the water and sugar to the pan. Cook it on medium flame.

 

Roast it continuously. When it starts leaving the edges of the pan, add the dry fruits and cardamom powder.

 

The rice flour halwa is ready. Serve it warm.

 

||Note||

 

Clarified butter (Ghee), water, sugar, dry fruits, can be changed/amounts adjusted according to your choice.
